Saos jagung minangka cuweran campuran asam amino sing terikat, asam organik lan uyah, produk reaksi Maillard, lan mineral. Analisis sensori nggambarake saos jagung kanthi rasa gurih khas kalebu 'xian' (鲜 ing basa Cina), umami, karamel, panggang, rada ragi, daging, asin, lan legi.[1]
